Carrot Pea Stew

Zutaten für 4 Portionen:

• one large onion
• four large carrots
• vegetable broth
• 200ml coconut milk or vegan cream
• 4 tbsp Olive oil
• salt, pepper, turmeric, curry
• 250g frozen peas
• sesame seeds

Zubereitung

Chop the carrots. Chop the onion and fry in a large pot of heatable oil until translucent, then add the carrots and fry over medium heat for another 3 minutes. Deglaze everything with the coconut milk or vegan cream and season with vegetable stock, salt, pepper, turmeric and curry spice. Continue to simmer on medium heat until the carrots are soft. Then blend everything with a blender and keep adding water until the desired consistency is reached. Then add the peas and simmer for another minute. Serve in soup bowls and top with sesame seeds.
