Vegan Rice Ribbon Noodle Dish

Zutaten für 2 Portionen:

• 500g Rice Noodles
• 300g zuchhini
• 200g fresh peppers
• 80g fresh leek
• 2 tbsp peanut butter
• 1 tbsp vegetable oil
• Sesame
• Flaxseeds
• soy sauce
• salt, pepper

Zubereitung

Cut the fresh leek into small pieces and fry them in a wok or pan with the vegetable oil. Meanwhile, heat water in a pot and add the rice noodles. Turn off the heat as soon as the water boils and leave the rice noodles to swell for about 5 minutes. Add the chopped zucchini to the leek and heat them on medium heat for 5 minutes. Now cut the peppers into strips and add them to the pan or wok together with the soy sauce and the peanut butter. Heat it for one minute. Now add the swollen glass noodles and spices. After 5 more minutes, the meal is ready.
Arrange it now with sesame and flaxseeds.
